We all spent the majority of 2020 locked inside, trying to avoid people and stuffing our faces with takeout. But that’s ok, it was a very stressful and scary year and we didn’t really know what we’re dealing with, so we turned to stress eating. Now let’s change that in 2021 by learning to cook some quick yet delicious meals. All you really need is about 30 minutes and your dinner is ready. And if you make more – you’ll have leftovers for the next day. It’s a win-win.

Who doesn’t like ramen? I mean, it’s one of the best meals out there. It’s delicious, nutritious, warming, and soothing at the same time. It’s basically comfort food, yet it’s customizable and can easily be made spicy or mild, depending on what you like. And turns out you don’t have to order takeout every time you crave some, you can just make it at home in 30 minutes flat.
Cauliflower “Mac” and Cheese
We’re not saying you should quit regular mac and cheese out of the box. We get it, it’s bad but it’s so good. However, if you have it every other day, perhaps you should try this slightly healthier alternative. It’s still yummy, it’s still cheesy, but at least you’ll get some veggies in you for a change.
Quick Shrimp Curry
There’s a reason so many cuisines have their own versions of curry. It’s freaking delectable and surprisingly easy to make. This version might look fancy cause it has shrimp, but you’ll be happy to know it only takes 20 minutes to make. A great dish to impress your family with, in our humble opinion.
Sweet Potato Toast
We don’t know about you, but where we are, toast is a crowd favorite. It’s so versatile, it can be a quick snack or a whole damn meal if you put enough stuff on it. And don’t worry, we’re not about to push avocado toast, we’re all kind of over it at this point. Instead, what do you think about sweet potato toast? As in, sweet potato instead of bread. Sounds kinda genius, doesn’t it?

This is a meal that can be done in 15 minutes but it’ll taste like you spent way more time on it. You can make your pesto if you want to, or you can use store-bought – that’s up to you. And add whatever veggies you like, we recommend tomatoes, green beans, or mushrooms. Definitely buy gnocchi though, no one has time to make these at home, and store-bought ones are just as good and take only 5 minutes to cook. This will be your favorite quick meal, we promise.
You can’t just spend your whole paycheck on Chipotle, but you don’t have to miss out on burrito bowls, we know how much you like them. So try making them at home. It’s not that difficult, all you need is a good dressing/sauce. And you can always buy that or just make your own.
Chicken Tortilla Soup
Don’t even get us started on soup. It’s so underrated and we’ll never understand why. Soup is the best, ok? It’s all made in one pot, so minimal cleanup, but the flavor combos are literally limitless. Try this chicken tortilla soup and you’ll become a soup fanatic immediately.
Italian Hash With Eggs
Such a simple combination – potatoes and eggs, but oh my god it’s so delicious. It’s filling, it’s nutritious, the added veggies make sure you’re getting your 5 a day and it’s so easy to make. A great thing to try for those who’ve never cooked before and an easy meal to add to your arsenal if you’re a confident cook already.
